CHOCOLATE PROTEIN GRANOLA

This granola is the perfect way to kickstart your day with a breakfast-appropriate chocolate treat!
Gluten free, lactose free, vegan friendly.
Ingredients
1 ½ cups | 155g Rolled Oats
¼ cup | 30g Macadamia Nuts
½ cup | 50g Walnuts
1 ½ tbsp | 15g Pumpkin Seeds
1 ½ tbsp | 15g Flax Seeds
1 ½ tbsp | 15g Chia Seeds
1/3 cup | 100g Maple Syrup
2 tbsp | 30g Olive Oil
½ tsp | 2ml Ground Cinnamon
½ tsp | 3ml Vanilla Essence

45ml | 25g VORA Good Shape Protein – Genuine Chocolate
Pinch of Salt
1/3 cup | 30g Coconut Flakes
1/3 cup | 30g Cocoa Nibs
Directions
Preheat the oven to 180°C.
Finely chop the macadamia nuts and walnuts, or pulse once or twice in a blender.
Mix together the oats, nuts, seeds, syrup, olive oil, cinnamon, vanilla, protein powder and salt in a big bowl.
Spread the mixture evenly on a baking sheet. Make sure the mixture is not layered too thick (this will prevent it from drying out properly and becoming nice and crispy). If needed, bake in two batches.
Bake for 20 – 30 minutes, keeping an eye on it to ensure it doesn’t burn. Stir the granola around once or twice while baking to keep it from burning and encourage more caramelisation.
Ten minutes before removing the granola from the oven, add the coconut flakes and cocoa nibs.
Allow the granola to cool completely before storing in an airtight container at room temperature for up to three weeks, or store in the freezer for up to three months.
