BANANA PROTEIN PANCAKES

Did you let your bananas get too ripe, but don’t want to go through the effort of baking banana bread? Try these pancakes instead!
Ingredients
4 ripe Bananas
1 cup | 250ml Almond Milk
2½ tbsp | 35 ml Coconut Oil
1 tsp | 5ml Vanilla Essence
1¼ cup | 200g Cake Flour

¼ cup | 60ml VORA GOOD SHAPE PROTEIN Humble Vanilla
3 drop Liquid Stevia
½ tsp | 2ml Bicarbonate of Soda
1 tsp | 5ml Salt
2 tsp | 10ml Cinammon
1 tsp | 5ml Nutmeg
Directions
In a big bowl, mash the bananas with a fork until no big lumps remain. Add the oil, vanilla and almond milk – to ensure that the coconut oil doesn’t solidify, make sure all the ingredients are at room temperature. If the milk had been refrigerated, it might be necessary to microwave it for a few seconds.
Add the flour, protein powder, stevia, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg. Mix everything together, then allow the batter to sit for 15 minutes.
Heat a non-stick pan over medium heat. Spoon the batter into the pan, one heaped tablespoon at a time, spreading the batter lightly with the back of the spoon. Allow the pancakes to cook for 3 to 4 minutes on each side – do not try to flip the pancakes too early, since they are fragile and will break.
Serve immediately with maple syrup, vegan yoghurt, fresh fruit or any other toppings.
